Dúmkes – little thumb cookies
75 gr. butter
75 gr. hard fat
125 gr. Brown sugar
1 egg
300 gr. flour
1 teaspoon cinnamon
1 tablespoon aniseed
Sniff of salt
50 gr. Almonds (chopped)
50 gr. hazelnuts (chopped)
1 teaspoon powdered ginger
How to make the dúmkes
Mix the butter, fat (make it soft, but not too warm), sugar and egg to a smooth dough. Well done you! Add the flour to the dough and knead for 15 minutes. Pfew, what an amazing effort. You should reward yourself. Add the cinnamon, salt, aniseed, ginger, and nuts to the dough. Roll the dough to a slab of approximately 1 cm thick, and cut bars from 2×4 cm. Place these bars onto a greased baking sheet and let the oven do its work for around 25 minutes on 180 degrees Celsius. When the Dúmkes are golden brown, take them from the oven and press them lightly with your thumb at both ends so for their aesthetics.
